Ingredients

3 medium bananas, overripe

¼ cup unsweetened applesauce

½ cup egg

½ cup milk

¼ cup butter (grass fed preferably)

1 tsp. real vanilla extract

2 ½ cups whole grain or flax flour

1 tsp. salt
-
1 tsp. baking soda
-
1 cup chopped walnuts, pecans or pistachios

1 ¼ cups sugar
Directions

Move oven rack so banana bread is situated in the center; preheat oven to 350° F.

Grease bottom of 2 loaf pans and set aside.

Combine sugar, applesauce and butter in a mixing bowl.

Add egg substitute and blend well then add in bananas, vanilla and milk. Beat until batter is smooth.

Combine flour, salt and baking soda then add into wet mixture until moist.

Stir in nuts (optional) and pour into pans until ¾ full.

Bake for 60 minutes or until a toothpick comes from the center clean.

Cool before slicing and store at room temperature.
