Skinny Banana Bread Recipe With Nuts

The midday snack is perhaps the hardest of all times to find
something that’s healthy and convenient to eat. Your first instinct
is to make a mad dash for the nearest vending machine or roach
coach, but an hour in the kitchen can give a week or more of
delicious banana bread to nosh in before lunch.

The right banana bread recipe needs two things: overripe bananas and the right nuts. With these two things you can make delicious banana nut bread that your coworkers will crave. The best thing of all is that this lower calorie recipe can leave your hunger satisfied and your conscience guilt free.

Ingredients

  • 3 medium bananas, overripe

  • ¼ cup unsweetened applesauce

  • ½ cup egg

  • ½ cup milk

  • ¼ cup butter (grass fed preferably)

  • 1 tsp. real vanilla extract

  • 2 ½ cups whole grain or flax flour

  • 1 tsp. salt

  • 1 tsp. baking soda

  • 1 cup chopped walnuts, pecans or pistachios

  • 1 ¼ cups sugar


Directions

  1. Move oven rack so banana bread is situated in the center; preheat oven to 350° F.

  2. Grease bottom of 2 loaf pans and set aside.

  3. Combine sugar, applesauce and butter in a mixing bowl.

  4. Add egg substitute and blend well then add in bananas, vanilla and milk. Beat until batter is smooth.

  5. Combine flour, salt and baking soda then add into wet mixture until moist.

  6. Stir in nuts (optional) and pour into pans until ¾ full.

  7. Bake for 60 minutes or until a toothpick comes from the center clean.

  8. Cool before slicing and store at room temperature.
