Low Carb Spinach Pancake Recipe – So Tasty!

Fat loss would be much easier if we could find a way to get more
fruits or vegetables into breakfast as well as other meals. Fat
burning foods like spinach no longer have to be relegated to lunch
and dinner with this unique and healthy low carb pancake recipe.

Instead of loading your pancake with butter and sugar syrup, enjoy a few slices of turkey bacon with this savory spinach pancake. This is one pancake that will leave you feeling energized and not the least bit guilty. Just make sure you thaw your spinach the night before, in fact mix up the batter and leave it in the fridge so all you need to do is pour coming morning!

Ingredients

  • 1 tbsp. flour

  • 3 eggs, beaten

  • 4 tbsp. cottage cheese

  • 1 tsp. salt & pepper

  • 2 tbsp. butter

  • 2 (10 oz.) packages frozen spinach, chopped

  • 3 tbsp. bread crumbs (plain or Italian)

  • 2 tbsp. olive oil

  • 2 tbsp. grated parmesan cheese

 

 Directions

  1. Beat eggs and stir spinach into them in a large mixing bowl.

  2. Stir in cottage and parmesan cheeses, flour, salt and bread crumbs.

  3. Refrigerate for 20 minutes.

  4. Heat a large skillet over medium heat and add oil and butter

  5. Pour batter into skillet until a pancake has formed.

  6. Cook until brown on each side, about 5 minutes.
